Hi guys, it’s Gaby from What’s Gaby Cooking and I’m so excited to be hanging out over here on Honestly! I’m all about living that California Girl life no matter where you actually live. This means that I love flip-flops and easy recipes that will brighten your day, and I’m always a fan of adding guacamole. I’ll be bringing you fun recipes that you can use anytime of the week and I can’t wait to hear what you guys think!

As a former Los Angeles based private chef, I have a slew of quick and easy weeknight recipes up my sleeve. They’re all fresh and delicious, and most will double as excellent leftovers the next day — because I’m also a huge fan of a leftover based lunch.

To kick things off, I thought we’d start with one of my favorites. It’s a crowd pleaser for sure, whether you’re cooking for your family or for a party! The layers of eggplant are lightly pan seared in olive oil, then stacked on top of each other with some marinara sauce, fresh mozzarella, and a little basil to give it that zip of freshness! You could also replace the eggplant with thinly pounded chicken cutlets if that would better suit your family!

Either way you make it, I can promise that your entire family will be begging for seconds!
