Start the new year off right with this nutrient-packed Berry Breakfast Bowl, by our friend (and Honest Mama) Juli Novotny Goddard. The addition of chia seed pudding gives your usual acai bowl a hearty update that makes it great for breakfast, or any time of day. Let your littles get creative with whatever toppings they love best!
BERRY BREAKFAST BOWL
Chia Seed Pudding
2 cups homemade almond milk
½ cup chia seeds
½ teaspoon vanilla extract
¼ cup (or less) maple syrup
3 frozen bananas
2 teaspoons acai powder or 1 packet of frozen acai (unsweetened)
¼ cup water
1 teaspoon coconut sugar
1 teaspoon maple syrup
Bananas, frozen fruits, granola of choice
- To make the chia pudding, combine all of the ingredients in an airtight container and refrigerate overnight.
- Next, combine acai bowl ingredients in a high speed blender and blend until super creamy. Add more water if needed.
- Add both mixtures to a bowl and tops with more fruit, granola or whatever else you feel like!
