These trail mix cookies, from our friends at Foodstirs, make a great travel snack to tote along on your next weekend adventure or a little something special to slip into a school lunch. Give the suggested mix-ins a try or feel free to make this recipe your own and toss in whatever you have on hand. There is no wrong way to play when it comes to these fun, functional bites.
TRAIL MIX COOKIES
Makes about 24 cookies
1 package Organic Chocolate Chippy Mix
6 tablespoons butter, room temperature
2/3 cup peanut butter
2 tablespoons honey
1 cup rolled oats
½ cup mini pretzels
½ cup raisins
½ cup cashews
- Preheat oven to 375 degrees.
- In a mixer on low speed, blend butter until smooth. Add egg, peanut butter, and honey and continue blending.
- Add dry mix and oats and blend on low until mixture forms a dough. Fold in pretzels, raisins, and cashews and mix until fully incorporated.
- Scoop dough into tablespoon sized balls and place onto a parchment lined baking sheet, and press down lightly. Bake for 12-14 minutes, or until edges are golden brown. Cool cookies slightly before removing from pan.
