Give mornings a makeover with this protein-packed pudding, courtesy of our friends at Honeysuckle. It’s a cinch to whip up and, since you can prep it the night before, you can go ahead and hit snooze.
Make-Ahead Chia Seed Pudding with Banana & Coconut
1 overripe banana
2 Tbsp maple syrup
½ tsp vanilla
½ cup chia seeds
2 cups coconut milk
- In a large bowl mash the banana. Add the maple syrup and vanilla, then stir to combine.
- Add the chia seeds and mix, then stir in the coconut milk.
- Portion out into bowls or tupperware and chill for 4 hours to overnight.
- Top with fresh berries, coconut flakes, almonds or whatever you like best!
