With Fall finally upon us, we’re going crazy for cauliflower! This cruciferous veggie is a source of many vitamins and and minerals, and is much more versatile than you might think.
Also known as “cabbage flower,” cauliflower can be found year-round, but is especially abundant in the Fall. While you’re probably most familiar with the white variety, it can also be purple or orange!
In terms of super foods, cauliflower is a good choice because it’s high in vitamin C and is a good source of folate. From cauliflower crust pizza to seared cauliflower steak, its unique texture makes it appealing for a vast variety of recipes.
Choose a cauliflower that is compact and free of large spots or bruises. The curd (or white head) should be uniform in color, and the outer leaves should be bright green, fresh, and crisp. If you are having trouble finding fresh cauliflower, feel free to try an organic, frozen variety.
Cauliflower can be stored in the refrigerator for up to five days. When you’re ready to enjoy, wash thoroughly and cut into florets. Once cut, florets should be used within a day or two. Try it steamed or sautéed, or experiment with one of our favorite ways below!
